  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk , room temperature

  • 3 tbsp vegetable oil , or canola
  • 1/4 cup mini chocolate chips (optional)

Instructions

  • Melt over low heat, while occasionally stirring. Once chocolate is melted, remove from the heat and whisk until smooth.

  • Preheat a griddle or large frying pan to medium heat.
  • In a large bowl whisk together the flour, cocoa powder, baking powder, baking soda and salt.
  • In a separate bowl or liquid measuring cup whisk together the buttermilk, sugar, egg and vegetable oil.
  • Gently fold the wet ingredients into the flour mixture. Then fold in the chocolate chips.
  • Lightly grease the frying pan or griddle.
  • Pour 1/4 cup of batter onto the griddle/frying pan per pancake. Cook for 2-3 minutes or until you see a few little air bubbles forming. Flip and cook on the other side for 1-2 minutes.
